1poundSalmoncut into 1-inch chunks
½teaspoonKosher Salt
¼teaspoonBlack Pepper

1tablespoonGrapeseed Oil

Instructions
Rinse and skin the salmon if needed. Then cut into 1-inch chunks.
Mix all the spices together in a bowl. Sprinkle over salmon bites until well coated.
Heat a large skillet over medium heat until very hot. Add the grapeseed oil and 1 tablespoon of the butter to the pan.
Once melted add the salmon in a single layer. Sear for 2-3 minutes, or until nice and brown, then flip over using tongs and cook for an additional 2-3 minutes. Once done, divide among plates and enjoy.
Notes
Crispy - To achieve the crispiest texture, make sure the oil is hot before adding the salmon bites. You can test it by dropping a small breadcrumb into the oil; it should sizzle and bubble immediately.
Wire Rack - Use a wire rack to drain the fried salmon bites if you have one; this helps to keep them crispy by allowing excess oil to drip off.
